Yeasts

Yeasts play a very important role in the taste and aroma of beer. They are unicellular living organisms that belong to the plant kingdom. Like all living organisms, they reproduce, and do so very quickly.
Top-fermenting yeasts ferment between 18 and 25°C; bottom-fermenting yeasts ferment between 5 and 15°C.
