

Calcium Carbonate (Chalk) is used in brewing to raise pH levels. Generally used in making dark beer. You can add sparingly to reduce acid in beers. Can also be used to reduce acid in wines. Acid reduction occurs immediately.
Calcium Carbonate (precipitated chalk) increases pH; 1 gram per litre adds 27 ppm calcium, 40 ppm carbonate.
Note: Due to its limited solubility it is only effective when added directly into the mash. Do not add it to the hot liquor tank!
