Endozym AMG is an enzymatic preparation capable of hydrolyzing the alpha-1,4 and alpha-1,6 glycosidic bonds of starch.
Endozym AMG produces glucose units from dextrins and limit dextrins present in the wort or beer. It enables the complete conversion of liquefied starch into glucose and allows for the adjustment of fermentation yield to reach the desired attenuation.
Used during fermentation, it allows the full potential of the starch to be expressed. It is also used for the production of light beers with a low residual carbohydrate content.
