Fermentis SafBrewTM LA-02 yeast has been specially selected for the production of alcohol-free beers (<0.5ABV).
This yeast does not assimilate maltose and maltotriose, but does assimilate simple sugars such as glucose, fructose and sucrose.
It has a subtle aromatic profile and an average sedimentation capacity. It does not form aggregates, but rather a consistent cloudiness when re-suspended in beer. A pasteurisation step is essential after using this yeast.
Dosage: 50-80g/HL
