Wheat malt is essential for brewing wheat beers, but it is also used in barley malt-based beers thanks to its protein content which gives the beer a fuller mouthfeel and better foam stability.
Wheat has no outer husk and therefore contains less tannin than barley. It is also much stickier than barley malt due to its higher protein content and can cause filtration problems if not subjected to a "protein rest" during brewing.
